In my Garden: Snow Peas!

If you only have a small space for a garden and must choose between a few items to plant, snow peas get my vote. Harvested fresh off the vine they have a freshness and crunch, even after cooking, that you just can't get from store-bought peas, which are often soft before and after cooking. Besides needing to trellis them, they are very easy to grow. Peas are a spring and fall crop. They like cool, damp weather.

Our favorite way to cook snow peas is simple: quickly sauted for a few minutes in olive oil and lots of chopped garlic and some red pepper flakes, served over brown rice or quinoa. In the picture below, Laura has also marinated and baked some tofu and added that to complete the meal. Can you see all the pieces of chopped garlic on the peas? She must use four or five big cloves, as we love garlic. I also grow garlic in my garden, but that's another blog.
